Richman roasts its own beans on a drum roaster, and filter coffee is what they do best. Sit at the long wooden bar and ask what's on pour-over today. It comes in a ceramic carafe on a wooden tray, with a card telling you the farm, process and tasting notes.

One to look for on their shelf: Ethiopia Bensa Sidama 74158 from Finchawa, a natural with raspberry, black tea and purple grape notes.
